Green wave mustard won the 1957 All-America Selection. Fedco describes it as the best mustard for northern climates. We pick it when the leaves are young and mix it with lettuces in salads, but we’ve also used older leaves in a quick stir fry or just cooked greens. It’s spicier raw and loses it’s heat when cooked.
Our seed comes from Fedco and is open pollinated.
